Mexican Taco Stew

Ingredients

  • 1 lb Ground Beef
  • 1 Medium Onion (Chopped)
  • 2 Cloves of Garlic (Finely minced)
  • 1 Packet of Taco Seasoning (Gluten-Free)
  • 2 Cups Chicken Broth
  • 1 Large Zuchinni (cubed)
  • 1 Can of Diced Tomatoes (14.5 oz.)
  • 1 Cup Salsa

Directions

  1. Use a fairly large pot or deep skillet to brown your ground beef.  Once browned, remove it but leave the drippings.

  2. Add the chopped onions and garlic and saute without burning the garlic.  It may be best to turn the heat down to a medium.

  3. Add ground beef and taco seasoning and mix thoroughly.

  4. Add the remaining ingredients, cover, and simmer for 15-20 minutes.

    I like to add avocado chunks, some extra salsa, and depending on if you handle dairy or not, a little cheddar across the top.  Creme Fraische also makes a decent addition but again be careful with the dairy unless you absolutely know you're ok with it.
