Preheat the broiler while you get out your chops. My stove has a High and Low broil setting. I selected High for this one. You're basically using the broiler as an indoor grill (and yes it may get a little smokey in the kitchen but the aroma is nice).
Liberally season each side of the chop with Herbes de Provence, Salt, and Pepper. Place them on a foil lined sheet pan.
Put the chops into the oven, moving the rack about 2 inches from the broiler if needed. Broil them for about 8-10 minutes or until they begin to char slightly. Flip them over for an additional 6-8 minutes.
Put down the knife, pick them up, and go primal on them. Simple and delicious and even more so if you got them from a local farm or from US Wellness.
